Note: On June 25, 2008, I raised my prices for pork, chicken, and eggs about 30% across the board after taking a good hard look at my costs given the out of control rise in feed costs (as an example, broiler mash went up 13% in one week). Grassfed prices, which are not affected by the rise in grain costs, will remain the same for this season.

Whole/Half Prices

Pastured Heritage Pork fed certified organic grain:

Whole – $3.95/lb hanging weight,* plus processing fees; $100 deposit

Half – $4.25/lb hanging weight, plus processing fees; $100 deposit

Grassfed Icelandic Lamb:

Whole – $3.75/lb hanging weight plus processing fees; $75.00 deposit

Half – $3.95/lb hanging weight plus processing fees; $75.00 deposit

Grassfed Goat:

Whole – $3.50/lb hanging weight plus processing fees; $75.00 deposit

Half – $3.75/lb hanging weight plus processing fees; $75.00 deposit

Pasture-Raised Chicken fed certified organic grain: Available whole only for $4.50/lb (avg. three to four pounds)

Old Fashioned Stewing Hens fed certified organic grain: Available whole only for $3.95/lb (very limited supply)

Eggs from Pastured Hens fed certified organic grain: $4.50/dozen

*Hanging weight = The weight of the carcass after it has been skinned and the organs removed. The slaughterhouse uses this weight to charge its fee, so it is a convenient weight to use. A typical hanging weight for a pig is about 150 lbs, for a goat or lamb about 45 lbs. The final yield is typically about 100-115 pounds of pork (whole), or 30-40 pounds of lamb or goat (whole).

    I saw your farmandfood@yahoogroups.com posting about a meat CSA for 2009. I would be interested in signing up as you get yourself organized. I have a family of 4 2 adults and 2 young teens and live in Halfmoon. I like your proposed mix of cuts. My current supplier of local meat in Clifton Park doesn’t offer the variety you and your neighbor do.
